tonight i was craving baked wontons... i decided to do pork. i did look up a recipe to get the basic spices i would need and then i started cooking. all measurments are bases, i added or took away as i felt like it. here are the things i used:
- ground pork (1 lb)
- green onions, chopped (just some... like maybe 1/4 cup?)
- salt (1.5 teaspoons)
- white pepper (1 teaspoon)
- sugar (1 teaspoon)
- ginger (1 teaspoon)
- seaseme seed oil (1 tablespoon)
- soy sauce (1 tablespoon)
- cold water (1/2 cup)
- wonton wrappers (or egg roll wrappers)
cook the pork in a pan. once it is fully cooked, add the green onions and stirred them together. add the salt (i poured the salt over the pan and got a little extra in it. i will bring this up again later) and pepper. stir together. add the sugar (i like things sweet, so i added a little extra just for my own tastes). add the ginger (accidentally poured a little extra in the pan). stir everything together. add the seaseme seed oil and the soy sauce (i added extra of both of these. i like the smell of seaseme seed oil, so i added almost a full tablespoon extra. i also added about an extra 1/2 tablespoon of soy sauce). the recipe i was looking at called for 1/2 cup of cold water and i have no idea why. i ended up putting in about 1/2 of the 1/2 cup (so 1/4 cup...)
stir it all together. put a lid on it and turn down the stove temp. i put my stove all the way on low. let it simmer for a little bit, maybe 10 minutes.
after it has simmered, use the wrappers (i used egg roll wrappers because i wanted them a little bigger. you can use wonton wrappers for smaller and more of them.) lay out a wrapper on a plate. the edges of the wrappers need to be wet to stick, so i dipped my fingers in water and ran them around the edges. they need to be fairly wet to work. i put a couple of small spoonfuls of the mix in the middle of a wrapper and fold it over into a triangle. roll/fold the edges in just a little bit so that they stay closed.
preheat your oven to 425 degrees. spray a pan and put all the wontons on it. put the pan in the oven. mine took about 10 minutes to turn golden brown. i only made 7 wontons... but that is because i used the bigger wrappers and filled them really full. you can use actual wonton wrappers and not fill them as full to make more.
outcome: really good. i think they had a good flavor but, they were a little salty. that could be for a couple of reasons. 1) i added too much salt. it probably came out to close to 2 teaspoons. 2) soy sauce is pretty salty by itself. you can probably leave this out... or you can cut back on the salt and the soy sauce and it should be fine.

my cooking philosphy
i hate recipes... like really. maybe it is just because i can't follow a recipe to save my life. and when i do follow a recipe, it comes out wrong and doesn't taste right. so when i cook, i decide what my base is going to be and what i want the eventual outcome to taste like. i have a few favorite tastes, but generally it depends on what mood i'm in. basically, i totally make up my own recipes. i don't know if i would actually call them recipes because i don't always measure everything, i just know what i think would look good. so yeah, that's how i cook and i'm going to try to share how i make stuff.
